Maple Yogurt Smoothie

This calls for Banana, but Berries are excellent too. Use any soft fruit you enjoy!

1 cup plain yogurt

1/2 cup milk

1/3 cup Pure Vermont Maple Syrup

1 ripe banana, peeled

Pinch of cinnamon

Several ice cubes

Add all ingredients to a blender and process until smooth. Serve at once.

Maple Peanut Butter Oatmeal Muffins

3/4 cup flour

1 cup rolled oats (oatmeal)

1/4 cup flax meal

1/2 cup peanut butter

1/2 cup Pure Vermont Maple Syrup

2 ripe bananas

2 eggs

1 tsp baking powder

1/4 tsp cinnamon

1/8 tsp nutmeg

2 Tbsp shredded coconut (optional)

Preheat oven to 350*F

Combine all ingredients in large mixing bowl.  Use baking cup liners, or lightly grease pan.  Fill muffin cups 2/3 full.  Bake for 15-20 minutes.  Makes 12 medium size muffins.
